Awadhi cuisine ,native to the city of nawabs Lucknow is known for it richness and amalgamation of flavours.The bawarchis (chefs) and rakabdars (gourmet cooks) of Awadh invented the dum style of cooking which is the art of cooking over a slow fire,and has become synonymous with Lucknow today.Awadhi cuisine includes dishes like kebabs,sheernal,quorma,warqi paranthas and other delicacies.The richness of this cuisine not only depends on its flavours but also on the spices,infredients and method of cooking.

To celebrate the flavours of Awadh JW Marriott Kolkata has come up with a very special festival,”Dawat-e-Awadh” which comprised of an elaborate spread of authentic awadhi dishes.

Chef Mujeebur Rehman is all set to give us an experience of lifetime with his cookingHaving worked with leading hotels in India and abroad, he boasts an impressive portfolio with strong and influential accomplishments achieved through his career. A chef with in-depth knowledge in North West Frontier, Kashmiri, Mughlai, Awadhi, Rampuri and Hyderabadi cuisine, Chef Rehman is well versed with the distinctions of many regional variations of Indian cooking and cooking styles. His passion for cooking and creating new recipes dates to his great grandfather who was associated with the royal kitchen of Awadh, deputed by the Nawab of Awadh for organizing and developing new delicacies. Chef Rehman has been spreading the charm of Awadhi flavor and taste across celebrities and renowned personalities such as Former President Smt. Pratibha Patil, Mr. Ratan Tata, Sahara Group Owner, Mr Subrata Roy, Bollywood actors like Salman Khan, Shilpa Shetty, Cricketers like Sachin Tendulkar, Irfan Pathan, Ghazal Maestro Late Jagjit Singh to name a few.

The festival has all the signature delicacies from the region of Awadh.The specially curated menu for the festival will be displayed as a part of the buffet with innumerable selections of vegetarian and non-vegetarian options. Some of the signature dishes on display will be ‘Shorba Gosht Yakhni (Flavorful lamb soup)’, ‘Kaale Chane Ke Asharfi (mildly spiced Black gram galettes)’, ‘Urad Ke Naayab Seekh (white lentil kebab, cooked on a skewer)’, ‘Murgh Tikka Mirza Hasnu (Chicken kebab with freshly ground spices)’, ‘Gosht Dum Pulao (Fragrant rice cooked on dum with lamb)’, ‘Bong Zafrani Nehari (slow cooked lamb with aromatic spices)’, ‘Nawabi Paneer Korma (cottage cheese preparation, recipe from a Nawab’s kitchen)’ and much more.

Every dish from the spread is uniqe in itself with the authentic flavours and spices.But the Nehari and the kebabs are a must try.The nehari cooked to perfection has a beautiful blend of flavours and would be loved by all.
