The Bengali cuisine boasts of some of the best-known and tastiest vegetarian dishes. Of course, shukto, chholar dal, chhanar dalna and dhokar dalna are some of these delicious ‘NIRAMISH’ dishes; however, there are many more such recipes that you must try out once in your life! Mochar Ghonto


This is a unique Bengali way of preparing the banana blossom into a curry that has a delicate blend of spices with a subtle sweet taste. Coconut chunks are added to compliment the flavour of this signature dish. In fact, cooking this exotic Bengali dish calls for an art, which is all about peeling the banana blossom in the right way. Pull the dark bracts away to reveal the fine florets inside. Each floret has a fine whitish string with a petite head. Both of them must be removed from the florets before cooking. Banana flower is generally cooked with diced potatoes with the right combination of cumin, bay leaves, ginger, garam masala, salt and sugar. Grated coconut is added to accentuate the flavour of this delicacy. Surely, a platter of ‘Mochar Ghonto’ from a ‘Bong kitchen’ is not just food; it is a piece of art!


Potoler Dolma


Ever heard of pointed gourds stuffed with a mishmash of boiled potato and cottage cheese? If you haven’t heard of it, it is time you asked your acquaintance from the Bengali community to treat you with this delicacy. The filling is deliciously prepared by cooking mashed potatoes and cottage cheese with chopped onions, garlic, ginger, green chillies, turmeric powder and salt. The seeds of the ‘potols’ are carefully removed before they are stuffed generously with the stuffing and then, cooked in a light gravy. Heavenly it is!


Echorer Dalna


Echorer dalna is the Bengali equivalent of the raw jackfruit curry. The trickiest part of this preparation lies in cutting the echor right. That is perhaps the most inconvenient part of cooking this delicious dish, which is placed at par with mutton; in fact, Bengalis consider the echorer dalna to be the vegetarian version of mutton curry! Raw jackfruit is cooked with diced potatoes, chopped onions, ginger, garlic, green chillies and a blend of whole spices as well as spice powders to create a luscious dish which is essentially Bengali in origin and flavour.
