Oil-Free Chicken Stew: Recipe

Whether you want a healthy breakfast or a not-so-heavy dinner, you can always opt for chicken stew cooked with vegetables. One of my favourite recipes of chicken soup is a light stew cooked with lots of whole spices, beans and carrots. Not only is it easy to make this soup, but it is also very delicious. It is extremely healthy too.

Total time required: 20-25 minutes

  • Chicken (cut in about 9-10 pieces): 500 g
  • Onion: 1
  • Shredded ginger: 1 tablespoon
  • Shredded garlic: 1tablespoon
  • Carrots: 1
  • Beans: 9-10 stalks
  • Tomato: 1
  • Green chillies: 1-2 (slit)
  • Cinnamon stick: 1(medium)
  • Cardamoms: 2-3 pods
  • Cloves: 6-7
  • Black pepper: 10-11 globules
  • Turmeric powder: a pinch or 1/3 of a teaspoon
  • Salt to taste
  • Sugar: 1 teaspoon
  • Drinking water: 4 cups (around 350 ml)

  • Clean the chicken well.

  • Cut the onion in halves, dice the carrots, cut the beans and shred ginger as well as garlic.

  • In a pressure cooker, pour all the ingredients listed under the ‘list of ingredients’

  • Seal the lid tightly and cook for about 10 to 15 minutes. Since it is cooked in pressure cooker, keep a track of the number of whistles. Cooking for 3 whistles should be fine. Turn off the flame.
  • Keep the pressure cooker sealed for another 10 to 15 minutes.
  • Serve this healthy and delicious chicken stew in a soup bowl and relish it hot!

  • You may sprinkle some black pepper powder and add a dollop of butter to add to its aroma and taste.

This chicken stew is an awesome way to add chicken as well as vegetables the oil-free way. You can also add potatoes, raw papaya, peas and squash to make it more healthy. I have learnt this recipe from my mother who has been cooking it for me whenever I would throw tantrums and refuse to eat healthy! Relish it and drink to your health!
