SOUPY NOODLES: RECIPE

Sundays are all about preparing special meals. Today I am going to share a one-pot meal that you may try out for a healthy and filling breakfast. This soupy noodles recipe is also going to be great for a quick lunch or dinner, when you are too tired to prepare a gamut of side dishes. It is healthy with lots of vegetables and chunks of chicken. Trust me, this meal is perfect for enjoying a rainy Sunday!

LIST OF INGREDIENTS:

  • Noodles: 150 g
  • Chicken: 100 g (shredded)
  • Onions: 1 (large, chopped)
  • Garlic- 10 cloves (shredded)
  • Ginger: 1-inch piece (shredded)
  • Carrot: 1 (medium sized, diced)
  • Beans: 7-8 stalks (cut in small pieces)
  • Capsicum: 1 (roughly chopped)
  • Black pepper powder: 1 tablespoon
  • Green chillies- 1-2
  • Salt to taste
  • Cooking oil: 1 tablespoon
  • Water

 

PREPARATION TIME: 15 minutes

COOKING TIME: 20 minutes

INSTRUCTIONS:

  • Boil the chicken in two cups of water and set the chicken stock aside.

  • Cook the noodles in boiling water and drain out the water. Set aside.
  • In a non-stick kadhai, heat cooking oil.

  • Fry ginger shreds for a minute over low flame.

  • Add garlic shreds and fry together.

  • Add chopped onions and sauté them for 2 minutes.

  • Add the diced carrots and beans; fry them together over low flame for about 5 minutes.

  • Add boiled shredded chicken and then, add the capsicums. Sauté.

  • Pour the chicken stock. Add two cups of water, salt and pepper powder.

  • Stew for about 5-7 minutes to ensure that the vegetables are cooked well.

  • Finally, add the boiled noodles to the kadhai, cook for a minute or two and turn off the flame.

  • Serve it hot.

ADDITIONAL NOTES:

  • The given quantity is going to suffice two persons.
  • If there are additional members in the family, increase the quantity of noodles, chicken, water as well as vegetables.
  • The soup is very light but tasty. However, if you want something extra, adding coriander leaves could be a nice way to add aroma to this recipe.

 

Soupy noodles can be a healthy way to enjoy your Sunday with your loved one. it is almost like the popular thukpa that we enjoy in the hill stations. Chomp the noodles, chew the chicken, munch the vegetables and guzzle the soup down while you see it drizzling outside. Happy Sunday!
