HEALTHY SANDWICH WITH DELICIOUSLY COOKED VEGGIE FILLING

When you want to make something healthy and quick for breakfast, sandwiches make a delicious option. I love experimenting with my sandwiches recipes. While the bread remains constant, the filling can be made out of a variety of ingredients and in a variety of ways. Today, I am going to share this vegetable sandwich recipe, which is healthy (because it involves the use of lots of vegetables and only a minimal use of oil), diabetic friendly (because it is all about brown bread, vegetables and no potatoes or sugar involved) and easy.

 

HEALTHY AND DELICIOUS VEGGGIE SANDWICH

Preparation time: 10 minutes

Cooking time: 15 minutes

List of ingredients

  • Brown bread (whole wheat bread): 10 slices
  • Carrot: 1 (medium sized)
  • Raw banana: 1 (medium to big size)
  • Capsicum: 1 (finely chopped)
  • Onion: 1 (finely chopped)
  • Garlic: 10-12 cloves (shredded)
  • Tomato: 1 (chopped)
  • Black pepper powder: 1 teaspoon
  • Salt to taste
  • Oregano seasoning: 1 teaspoon
  • Soya bean oil/Rice bran oil/Olive Oil: 1 teaspoon

 

INSTRUCTIONS

TO COOK THE SANDWICH FILLING

  1. Peel the carrot and raw banana. Boil them together, preferably in a pressure cooker, and allow them to cool. Mash them.
  2. Chop the tomato, onion, capsicum and shred the garlic cloves.
  3. In a non-stick kadhai, heat a teaspoon of oil and fry the shredded garlic over low flame for 2 minutes.
  4. Add chopped onions, capsicum and tomato and fry all the vegetables together for about 2 to 3 minutes.
  5. Add mashed carrots and raw banana and stir well to mix all the ingredients in the kadhai.
  6. Add salt, black pepper and oregano. Cook for five minutes to get a colourful, rich, clammy and thick concoction of vegetables. Turn off the flame.

TO PREPARE THE SANDWICHES

  1. Cut each slice of bread diagonally and carefully sever off the crusty sides too. Spread the filling liberally on each oblique piece and sandwich with the other slice. So, that way, you will make 10 sandwiches.
  2. Put the sandwiches in a sandwich maker to make perfectly crispy and delectable sandwiches.
  3. If you do not have a sandwich maker, you can still enjoy these tasty and healthy sandwiches, sans the crisp factor.
  4. Serve your sandwich with tomato ketchup or coriander chutney.
